According to the spec sheet the 2 color modes are Color and B&W which seems self explanatory.

Are you asking about sRGB vs. Adobe RGB? If so, the answer will depend on whether you capture raw or JPG and how you plan to use your images.

For the most flexibility, raw capture and Adobe RGB is the way to go. Also if you use raw, you can defer the decision until the conversion stage.

If the D1h has the standard Nikon color modes, Mode II and AdobeRGB. Cameras older than the D2X cannot do any other mode and still use the AdobeRGB colorspace; Mode II is designed for post-camera processing in Photoshop, etc.

Saving to raw format may mitigate that - do your own testing to be sure; if so, color mode is strictly for your viewing pleasure on the LCD. (Just like sharpening and NR - except long exposure NR in some Nikons, which actually modifies the in-camera image by taking a second, black exposure image and filtering out hotspot noise...)

Are you referring to the colorspace, or to modes that would affect saturation or color balance?

For colorspace, stay with Adobe RGB. You will rarely notice the difference, at least from what I have seen in the Canon cameras, but since it is a larger colorspace, it won't hurt anything to have that slightly extra bit of colors.
