Hi Chris,
Your end of the county is jammed full of wildlife locations from wooded valleys to high moorland. Have you looked at Staffordshire Wildlife Trust's web site at http://www.staffordshirewildlife.org.uk/?

Also check out the Cheshire Wildlife Trusts web site.
There is Cannock Chase to the south. A big area with woodland and heath.
I've only been to Coombes Valley birdwatching but there was a good hide in the wood. It was on a slope overlooking the trees and with a long lens could be good for flycatchers etc in spring.

Try Trentabrook reservoir at Macc Forest - big heronry, grebes, cormorants and goosanders and Macc forest also has some spectacular Red Deer with many stags running to Royal head class.
South East of Macclesfield forest beyond Shuttlingsloe is Wildboarclough valley, the stream running north and through the valley used to be excellent for Dipper - the circular walk from the Macclesfield reservoirs up to Shuttlingsloe Peak and through Wildboarclough used to be birding stomping ground in my teens, but that is 30 years ago
