When I shoot in the manual mode on my D200 the EV data on the LCD does not reflect what the meter showed.
For example, if I meter on a tree and set the EV to 0,the screen and exif data in Bridge shows whatever the last setting
was when I was shooting in Aperature or Shutter Priority.
Is this normal or do I need to have the camera checked out by Nikon?
I'm sorry you haven't gotten responses... I have a D200 and wish I could help, but I am a little confused by your question. I don't even know what to ask to help clarify the issue. I know this doesn't help except to let you know that many of us have looked here to see what we might offer...
One suggestion: try contacting the Nikonians. Entering Nikonians in your browser should get you there. If you see Mike Hagen's name, contact him. He is a Nikon camera guru and teaches a lot of workshops through the Nikonians. Best of luck.

Gary - I'm assuming you mean that :
1) You are shooting in manual mode
2) The exposure information on the LCD and EXIF data doesn't match what your settings actually were
3) The setting that do show up are those that you last used with the camera set to Av to Tv mode
I'm not sure where the "EV 0" thing comes in though. EXIF data usually contains the shutter speed, aperture, and ISO (sometimes) - which is the information that makes up your exposure. The exposure compensation - the EV setting - isn't used in manual mode. It would only function in one of the automatic modes, where it affects the cameras choice of exposure. So in manual mode, no matter what you set the EV to, it will probably record whatever you have the shutter speed and aperture set to manually. These may be the settings previously used in Av or Tv mode, but not the exposure compensation (the EV).
I don't have a D200 (or any Nikon) so I hope this makes sense and helps...
I also could use a little more clarification on the question. Are you saying that the exposure data on the LCD does not match the shutter and aperture settings you made on the camera? If so, then I'd suggest contacting Nikon as it sounds like a problem with the camera.
You also mention that Bridge shows the last setting from when you were in A or S mode. Have you tried looking at the EXIF data with another utility like Breezebrowser?
If you have set exposure compensation in Manual Mode, that will show up on the LCD. It's listed as EXP. +/- on the same screen that shows your shutter, aperture, etc.
Exposure compensation will effect your metering, even in Manual Mode. If you've set it for -1, and you then zero your meter, you'll get an image that's one stop underexposed from what the camera would otherwise call medium.
However, if you're in Manual Mode, the exposure settings on the LCD should be the same ones you set on the camera.
