Last week I ordered Think Tank's Camera Supports Straps. They clip to the shoulder rigging on a backpack and hold the camera so that you don't have to use the neck strap. This weekend I had the opportunity to use them. Awesome. They put all of the weight of the camera on to the pack, but still keep the camera accessible for snapshots along the trail.
One thing I'd mention though. The straps work best with a neck strap with a ring like the one Think Tank sells (as opposed to the strap that comes with a Canon camera). Domke makes an identical strap and they make one for Canon. The Think Tank strap is $25, the Domke $12.95 at B&H and the Canon made by Domke is $10 at B&H.
Sorry I don't have any pictures of the setup, but you can get a good idea of how it works from Think Tank's site.

Thanks, Mel! Been looking for something like this, always great to hear a first hand report.
