I am thinking of photographing this park for the first time. Can anyone suggest the best trails for fall colors? What about waterfalls?

Mike,
Here's a link to the park maps. http://www.nps.gov/cuva/planyourvisit/maps.htm
Because we've had so little rain, some of the falls are at minimum flow right now. Brandywine Falls is the largest fall in the park. Others are Blue Hen and Bridal Veil. Sylvan Pond is one of my favorite places to shoot in a still morning--great reflections. A lot depends on when you plan to be there.

Mike,
From all I can gather after talking to my friends in the area, everything might be early. Usually peak is around the last weekend in October. but due to the dryness, I think the weekend earlier might be the time. I am conducting a photo workshop in and around the park that weekend and I am glad I pushed it up a week this year.
As Chuck indicated, lot of it depends on when you go. Now that I am on the left coast, I bet me Beatty and Mr Kulon will be posting info. Also you might want to check into www.neoshoots.com (free site) for photographers in NE Ohio. Tell Bob that I sent you!
I hope to see a lot of great images to remind me of my former abode.

Look at the trees in the background - they are already turning. This was shot last Sunday morning at Hale farm. I would say, roughly, the color will peak 2 weeks early, around 10/10 and not be as glorious as some of the more notable years in the past (but probably better than last year).

Mike, There are a number of motels (cheap and otherwise) at the intersection of I-77 and Medina Road in Montrose (West Akron). The link below will hopefully take you to the info you need. This intersection is a few miles south of CVNP. Bob may have more choices at the northern end.
