Hi Andy,
Do you have a nice inkjet printer that can print up to A3 such as an Epson R2400. If so rattle a few print off on that and when dry roll them up and place in a parcel tube. You can print say 10 off of each image on display. Each print and tube should keep your costs down yet help maximise your profits at the event - also more people will be inclined to purchase it in this way as its cheaper plus easier to carry back to the car.

Andy - forms man, forms!
Just put little labels on the bottom corner of each print frame and photocopy a few order forms.
Put something like "allow 3 weeks for delivery" on the form - that way you'll get plenty of notice for printing the orders and you won't have any waste.
If it helps, bung the reserve a freebie of their choice and get them to do the form admin, or buy a load of second class stamps and bang some SAE's with the forms so the 'order-ees' post the forms straight to you.
Which ever way you do it,you need to avoid waste and only print what is needed.
Best of luck matey!
PS - I might well be up at Ainsdale on Thursday if the weather forcast is to be believed - I know the tide's a low one but it's the Sanderlings I'll be after.
