On my Canon should I choose AWB[auto white balance] for landscapes and should I use Adobe RGB for Color Matrix or should I use H-Sat then assign Adobe RGB in Photoshop? Which Color Matrix choice has the widest gamut? Shouldn`t this be the one to shoot in? I shoot in RAW only.

If you shoot in raw, all this can be changed in software. I always use AWB, it gives the best rendition 99% of the time. I use sRGB instead of Adobe RGB, its my personal preference and I believe the default setting on Canon cameras. Adobe RGB has a wider gamut. I used the Landscape setting with the H-sat setting. The easiest thing to do is to open a photo in the Canon software and adjust the raw settings so you can see the actual effects of the various settings and then adjust accordingly.
