When I go to print an image there is a checkbox for Print Match Colors, printing the image with this checked and another with it unchecked seems to make no difference although there is a big difference in the small preview image on this page.
What exactly is this for?

Rob - That's an option that controls how PS shows the preview of your print. It means it will try to make the preview match the colors of the actual print, taking the paper profile into account. It doesn't do anything to the print itself. It's somewhat like softproofing. In CS4 there are also two boxes right near it for "show paper white" and "gamut warning" - both of which also only apply to the preview. If you're soft-proofing separately, you don't really need to worry about these, but you could use them in the preview window if you want to.
