Nate,
You'll be here right as waterfall season is firing up. The gorge is an easy choice with countless opportunities a mere 30 minutes from Portland.

Wooden Shoe Tulip Farm: http://www.woodenshoe.com/ - along with 300 other photographers
The wildflowers in the gorge east of Hood River (65 mi. Hwy. 84 east) should be peaking during that time, and the waterfalls will be gushing and have some nice green spring leaves draping over them.
Spring in the Portland Japanese Garden is also a can't miss.

Nate,
I've been researching my upcoming Oregon trip about the same time as yours. I've never been to Oregon but some places I want to check out are, the Gorge area (Latourell Falls, Bridal Veil Falls, Multnomah Falls, Elowah Falls, Wahclella Falls, and the Eagle Creek Trail with Punch Bowl Falls) on my way to Hood River. A good website for pictures and descriptions of the waterfalls is http://www.waterfallsnorthwest.com/nws/ I'm hoping the fruit trees will be blooming in the Hood River valley. The Hood River Valley Blossom Festival is April 18-19. The Rowena area, the Tom McCall Nature Preserve and The Dalles Mountain Road have been recommended for wildflowers. Silver Falls State Park is south of Portland near Salem.
For gorge hikes check this site: http://www.gorgefriends.org/hikes/currentschedule/
It is a very smart site. They schedule the hikes to bring the full potential from the hike location vs. time of year.

In addition to the places already mentioned, within a two-hour radius of Portland you can also consider Cannon Beach/Ecola State Park, Mount Hood and maybe even Mount Saint Helens.
