I am going to Nicaragua December 1-4, 2010. My husband will be hosted by one of the tobacco plantation with his cigar club. There will likely be a lot to photograph there but,

Does someone know of a guide or workshop there that I might look in to?

A few years ago my wife and I were there for a medical mission. we landed in Managua and went south to San Juan del Sur one year and Omatepe Island in Lake Nicaragua the next. All I remember was miles of desert interspersed with towns and small citeis with dirt roads. The island of Omatepe was a lot of jungle but is an hour's ferry ride from the mainland. Again very undeveloped. There were some monkeys, snakes, and some birds, but not in a high density to really photograph. The snakes can be very dangerous, so watch out.

Perhaps we didn't get to the high yield areaas as we were doing health care/

I spent 3 weeks there awhile ago. 3 days isn't too long, so it would be very helpful if you could be more specific as to where you'll be.
If Managua, then I would highly recommend a trip to the nearby Chocoyero Nature Reserve to view the Chocoyo parakeets en masse along the cliff walls there. Plenty of toucans and other animals, as well.
Just about any tour outfit in Managua can arrange travel there, or you can just hop a bus and then a pickup 'taxi'.
You can view a handful of images I took at Chocoyero (incl. some parakeet shots) near the top of this page here. Note that I wasn't equipped for any serious bird photography. :frown:
