Be sure your numeric keypad is active. At the text insertion point in your text layer where you want the symbol, type Alt + 0169. The copyright symbol will magically appear.
I just tried Alt+g in a Type layer in CS6 (Windows)--doesn't work.
I searched in Photo Shop Help, and couldn't find anything regarding a shortcut key combo for the copyright symbol.
Other than the Alt+0169 trick, one can use the Character Map in Windows, or the equivalent on a Mac. Those are the only ways I know of to insert the symbol.

One other way I've used... Google "copyright symbol" and find a page that has one in text. Then just do a usual cut and paste.
