Hi all.

Sorry to post an off-topic question here, but I am looking for some information.

My 10 year old son is doing a state report on Colorado for his 5th grade class. For this report, he is supposed to provide a recipe that is unique to that state - and maybe even make the food for the class if easy and affordable enough.

In Utah, this would be easy...us members of the Church of Jesus Christ of Latter Day Saints (Mormons) eat lots of Jello, Funeral Potatoes (cheesy potatoes) and other odd (unique) stuff.

Are there any unique Colorado dishes that he can report on?

Thanks in advance!

Rocky Mountain Oysters?

Hard to pick a unique dish associated with Colorado.
Grant's "oysters" are associated with all the Rocky Mtn. states.
Although, I think soon various cannabis recipes could compete for the official state dish.

On a more serious note - how about the widely known Denver Omelet / Sandwich?
I understand the Chinese cooks working on the transcontinental railroad created the Denver sandwich.
It was simply Chinese Egg Fu Yung prepared with green peppers, onions, and usually chopped ham.
The cooked omelet was put between two pieces of bread and eaten as a sandwich.

The Official State Fish is the Greenback cutthroat trout, how about that? Other than that Colorado is known for beef and lamb, so I'd vote for a bison burger.

Unfortunately (or fortunately, depending on your perspective) we are best known for beer...not quite appropriate for 5th grade. I'd second the Denver Omelet.

Thanks everyone! Your suggestions were very helpful. My son has tried rocky mountain oysters - last year in Cody, WY. He was OK taking them if we would have had a good way to make it happen.

It's probably impossible to verify this beyond a doubt, but I've heard it claimed that the propane chile roasters so beloved by New Mexicans were actually invented in southern Colorado (Pueblo or Trinidad, I forget the details). If he can find any good roasted NM green chile, it could be a strong entry, though it's not the right season currently.
