motel or lodge in SE suitable to host workshop

Not sure if this is the right place to post something like this but here goes.  I have been hosting photo workshops every April and October in Flat Rock North Carolina.  I am looking to diversify to other areas for nature photo workshops and wondering if anybody would have a recommendation for a motel or lodge to use as a base.  Prefer to stay away from the typical multi-story chain motels/hotels.  Eastern Tennessee, western North Carolina, southern Virginia, northern Georgia area.  Any thoughts would be appreciated.

How about Big Meadows Lodge in Shenandoah National Park ? They have a small conference room in the basement. I have been to workshops there. beautiful place to shoot too.
