Excellent details here indeed and superbly processed to make the detail in the shadow areas come out too. Your explanation does help to explain (at least for someone who does not know Bison well) what is going on here.

Excellent capture of this behavior Ian! I really like how you used the angle you shot this at. I think many photographers would have shown the entire Bison, which would have taken away from the action you were trying to show here. Your choice was perfect for my tastes! BTW....very good job on exposure. not an easy task with the heavy shadows.
